Espresso Blend: Linnaean St.


Linnaean St. is a cross street with Mass ave in Cambridge, MA. It is the first place I lived when I originally packed up and made the move to Cambridge. The area and the people there hold fond memories for me of autumn leaves and brick sidewalks. It's a postcard picture of massive Victorian houses displaying mixed color palettes.

This blend consists of three simple components each adding their own distinct characters. The base is our Morenihna Formosa at 65%, a screen dried dry process Brasil that has a distinct dry cherry character and an almond finish. The second component at 25% is the signature of this blend, the Las Lajas 'miel' or honey prep Costa Rica. The Las Lajas is a very autumnal coffee with sweet red apple and deep maple tones. This coffee is the dominant profile in the blend. The third and smallest component at 10% is the Ichimara 08 peaberry. Peaberry tend to be very singular and this one is a distinct sugar cane note with soft red fruit and a touch of cocoa due to roast degree. The sugar cane amplifies the maple notes and the soft fruit enhances the cherry apple notes without dominating or interfering.

We recommend this coffee at 198f to 200f, 16gram dose, 26-28 second pull at 1.25oz to 1.75oz. Every machine is different but those parameters are a good starting point. If it seems too bright, the temp is too high, if it is too dull and has a flat sour, the temp is too low.

We also recommend this blend as a pour over or paper filter.

Espresso Blend: Poker Face

A mix of Cardenas (80%) and Kiandu (20%), this is a classic ristretto espresso with unique flavors. Berries, cocoa, vanilla, perfume aroma, and syrupy body. This is uniquely different in it's character thought the extraction may be a bit different than usual.

We recommend it as a 22g triple, 201.5F, and 1.25oz.
